Asian Miso Salad

Ingredients:
  • 1/2 cucumber (fine cut strips)
  • 1 carrot (strips)
  • 1 eggplant (cut in halves)
  • 1 red bell pepper (strips)
  • 1 onion
  • crushed pepper
  • 1 - 2 Tbsp. sesame seeds
  • 1- 2 Tbsp. sesame oil
  • 1 -3 Tbsp. miso
  • 1 - 2 Tbsp. sugar
  • 1 Tbsp. kikoman
  • 1 Lemon

Procedure:
  • Chop veggies in to strips. Put it in a container or bowl. Set aside.In a pan, heat olive or sesame oil. 
  • Add chopped eggplant. Saute about 4 - 5. (Until soft)

Miso Dressing:
  • Add miso, sesame oil, sugar, kikoman, lemon, and sesame seeds in a small bowl. Mix well. (You can add grated ginger if desired)
