- 1/2 cucumber (fine cut strips)
- 1 carrot (strips)
- 1 eggplant (cut in halves)
- 1 red bell pepper (strips)
- 1 onion
- crushed pepper
- 1 - 2 Tbsp. sesame seeds
- 1- 2 Tbsp. sesame oil
- 1 -3 Tbsp. miso
- 1 - 2 Tbsp. sugar
- 1 Tbsp. kikoman
- 1 Lemon
Procedure:
- Chop veggies in to strips. Put it in a container or bowl. Set aside.In a pan, heat olive or sesame oil.
- Add chopped eggplant. Saute about 4 - 5. (Until soft)
Miso Dressing:
- Add miso, sesame oil, sugar, kikoman, lemon, and sesame seeds in a small bowl. Mix well. (You can add grated ginger if desired)
